Personally, I use the DiVA method, as it allows for a little more fine tuning and is quite a bit faster once you get the process down. It also is able to do 2-pass Xvid rips, which should theoretically be of the highest quality possible in a Mac. On the other hand, OpenShiiva will create an mp4 file, which should be viewable with most MPEG4 compatible players. Also, DiVA is limited to using Quicktime codecs, so it currently cannot do 2-pass encoding. However, if you plan on distributing the files, it can be a hassle for people to install Quicktime (if they're on a PC) and the 3ivx component. A few more notes: Currently, Diva only encodes to the Quicktime container, which is fine for personal use.
